    I would like to "challenge" everyone to post their most tried and true recipes in the cooking section. I would like to make a scrapbook cookbook and I love to cook and try new things. So lets get the recipe section hopping!

    That is a great idea. Most of my best ones are family ones and are just in my head...kind of mix stuff until it looks right type of thing without measuring. I'm going to have to write stuff down next time I make them.

    Ok here is a very easy recipe and very delicious

    It's a form of enchalada but using flour tortillas..you can also use this recipe using the corn.

    heat oven 375
    1 lg can of green enchalada sauce (mild...you can doctor is you want more spice)
    1 8 oz container of sour cream
    1 can of chicken broth
    1 or 1 pkgs shredded cheese (I use monterey jack, colby, velvetta, mortzella,....recipe to follow)
    1 chopped onion
    3 or 4 boneless chicken breast (can use hamburger if you choose..be sure to drain)
    chilli powder
    garlic powder
    salt and pepper

    in large skillet saute onion in oil and add meat, add chili, salt/pepper, garlic powder (to taste) cook until done.

    in chopper (mini elec chopper) chop meat til fine or you can shred)
    set a side.

    with dripping from meat add enchalada sauce bring to small bubble, reduce heat add chicken broth cook 5 min. or so then add 4 oz sour cream, stir til blended.
    Dip tortilla in sauce and lay in baking dish, add meat, cheese (shredded or sauce) and additional chopped onion if desired. Roll Continue and fill pan.
    Pour more cheese sauce over top bake for 20 min at 375.
    You can just add shredded cheese to inside and top if you don't want to make sauce.

    Serve with shredded lettuce and tomatoe and sour cream.
    My daughter has an awesome Spanish rice recipe I will get from her and add another time.

    For the cheese sauce I put the cheese's I want to use in a saucepan and add half n half or heavy cream and melt til it's a sauce. I do add some rotel if I want and added flavor. This sauce is also great for tortilla chips as a dip.

    Let me know if you try this and what you think. My family loves it and there is always a request for it.

    This recipe is a favorite at parties or picnics and fairly easy too.

    Buffalo chicken wing dip

    2 boneless skinless chicken breasts
    2 bricks of cream cheese
    1 cup hot sauce (any cheap kind will do)
    1 cup ranch dressing (any cheap kind)
    shredded cheddar cheese (I use the whole bag)

    Cook the chicken breasts, I boil mine until done. Shred the chicken, I pull mine apart with 2 forks. Simmer the shredded chicken and hot sauce for 15 minutes.

    Add the cream cheese, stir, it's ok if it is still chunky, and the ranch dressing. Mix it well and spread in a 9x13 pan.

    Cover the top with the shredded cheddar cheese and bake at 350 for approximately 30 minutes.

    Serve with tortilla chips or crackers or anything else you can think of.
