    Ok Janelle is in the chat right now and needs a new eating plan. Post veggitarian reciepes. No eggs - use egg substitute. No chicken or shrimp. Can have fish. Think if it was the season of Lent what could you have on Friday.

    1 1/2 pounds small new red potatoes (about 15), scrubbed and dried
    1/4 cup extra-virgin olive oil
    4 to 6 cloves garlic, crushed
    1 tablespoon fresh or 1 teaspoon dried rosemary

    Preheat the oven to 350 degrees F.
    Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot.

    Easy Couscous Salad

    1 1/4 cups couscous
    1/3 cup fresh lemon juice
    1 tablespoon extra virgin olive oil
    2 med. bell peppers, 1 red 1 orange, chopped
    1 can (15 oz) chickpeas, rinsed and drained
    1/2 cup feta cheese, crumbled
    basil, cilantro, or parsley

    Bring 1 1/2 cups hot water to a boil. Add couscous and turn off heat. Let stand five minutes, then fluff with fork and transfer to a bowl. Add lemon juice and oil then toss to coat. Mix in peppers, chickpeas, and cheese. Garnish with herbs such as cilantro, basil, or parsley. Can be served immediately, at room temp. or chilled.

    This is something I make all the time.
    I love portobello mushrooms and use them alot intead of meat.
    Hope you will try this and enjoy.
    You can dress these up as you would any hanburger.

    Portobello field burger

    4 portobello mushrooms, stalks removed
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon lemon juice
    4 whole-wheat rolls
    4 teaspoons dijon mustard
    Olive oil spray

    Wipe off mushroom caps with a damp cloth. Season each with salt and pepper and sprinkle with lemon juice.

    Spray a large nonstick skillet with olive oil spray. Heat skillet over medium-high heat. Place mushrooms in skillet, cap sides down, and cook for 2 minutes. Flip mushrooms and cook on other side for another 2 minutes.

    Slice each roll and spread with 1 teaspoon mustard. Place mushrooms on rolls. May also be served with lettuce and tomatoes.

    Makes 4 servings.

    oh wow guys - thanks - I LOVE mushrooms! One of my favorite dishes is the Mushroom Jack Chicken sandwich at Texas Roadhouse!

    Janelle I posted this for Tammy casue she doesn't like to eat meat all the time. Maybe you can try it.

    Fresh Vegetable Stir-Fry

    Serves: 4

    Serve with a side of brown rice and you've got a tasty meal.

    INGREDIENTS

    Ingredients for sauce:
    1/2 cup pineapple juice
    1 tablespoon sugar
    1 tablespoon lemon juice
    1 tablespoon corn starch
    1 teaspoon soy sauce
    Ingredients for vegetables:
    1 tablespoon olive oil
    1/2 medium onion, chopped
    1 cup broccoli florets
    1 cup carrot slices
    1 cup chopped celery
    1 cup chopped zucchini
    1 cup chopped red or green pepper

    DIRECTIONS
    1. Combine the ingredients for the sauce in a bowl.
    2. In a large sauce pan or wok, heat vegetable oil over medium heat. Add onion, broccoli, carrots, and celery. Stir and cook for about 2 minutes.
    3. Add the zucchini and peppers, stir, cover the pan and cook for 1 minute.
    4. Add sauce, bring to a boil and cook for 1 minute, covered. Serve vegetables while hot.
