I am so upset I can not find my Italian Cheesecake recipe anywhere. By any chance does anyone have it(lol) or one of their own that is delicious. Mine didn't have any lemon or lemon rind in it. But it was delicious!

Is that like a Ricotta pie or something else?

    This is one I have....

    Italian Ricotta Cheesecake

    INGREDIENTS
    9 eggs
    3 pounds ricotta cheese
    1 teaspoon vanilla extract
    1 teaspoon ground cinnamon
    1 cup white sugar
1 teaspoon grated orange zest, optional
1 (1.5 fluid ounce) jigger whiskey, optional

    DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat two 9-inch pie pans with vegetable oil cooking spray.
Beat eggs in a large bowl. Mix in the ricotta cheese, vanilla, cinnamon, sugar, zest, and whiskey. Pour into prepared pans.
Bake in preheated oven for 1 hour to 1 hour 15 minutes, until firm. Let cool, then refrigerate until cold.

To scrap or to cook, that is the question!

Actually it is something else Cass. It is made with Ricotta Cheese and lots of eggs, it has some flour in it and some people put citron in it (I think that's what you call it). It is different than the one 2 Girls mom posted it is made in a spring form pan. I found an old Polly O Cookbook with a recipe similar to the one I used to have. I am going to try it tomorrow. I'll let you know how it turns out one day next week since we won't be eating it until Sunday.

    Melissa,

Thank you so much for trying, but that is definitely not like the one I was looking for. Unfortunately we don't use an alcohol in out home so I won't even be able to try it. I wonder if I could leave it out.

    Thanks again honey.

Thank you all for the help

I made the Italian Cheese Cake on Saturday. I landed up combining what I remembered from my original recipe and one that a friend who owns an Italian Restaurant used to make. I came out soooooo yummy. I have the leftovers hidden so no one else eats it. Isn't that so bad of me! They have a bunch of other cake and stuff to eat. lol Italian Cheese Cake is my favorite. The way I look at it, I am diabetic and at least I am not eating a bunch of starch and I am getting some protein even if there is a little sugar in it. It has to be healthier for me than chocolate cake!

    Hugs,
    Donna
