It's hard working full time and coming up with quick dinner ideas. I'm getting really bored with the same ole ones I make over and over again.

    Here's a really easy risotto-

    You need the following:
chicken, in small pieces (i use a whole chicken and de-bone it, lots cheaper)
A can of cream soup ( i like to use cheddar cheese, but you could also use others)
    some broccoli
some rice (i use 1.5 cups for 5 people)
milk (i use about 1/2 can, but you may need more if you use more rice)
    cheddar cheese

Basically your going to mix everything together after the rice, chicken, and broccoli are already cooked. If you need more sauce, add more milk and even a little pat of butter if you like. Add cheese till it's cheesey enough for your family. I use lots . Add a little pepper, and voila! You've got your meat, veggie, and side all in one! My kids love it, but then their favorite food is cheese broccoli...

A really quick and easy casserole recipe.
2- cans cream of chicken soup
    1-12 oz can evaporated milk
    1 medium onion chopped
    4 oz. chopped green chili
1 bag Fritos (I use regular size not Scoops)
    3/4 C. shredded cheese

Mix first 4 ingredients in a bowl. Pour enough Fritos in to cover the bottom of a 13X9X1 inch casserole dish, pour mixture over Fritos, sprinkle with cheese and bake at 350 for 45 minutes or until bubbly and beginning to brown on top. Add a salad and maybe some Spanish Rice (Rice A Roni) and you have a quick meal.
I sometimes mix the first 4 ingredients in a saucepan and heat before pouring over Fritos, this cuts down on the time in the oven.

    Mozzarella and Pesto Strata
16 slices (3/4 inch thick) French bread (1/2 pound)
    cup basil pesto
    cup sliced ripe olive
1 cup roasted red bell peppers, (from 12-ounce jar), drained and sliced
2 cups shredded mozzarella cheese (8 ounces)
    8 eggs
    2 cups milk
    teaspoon salt
    teaspoon pepper
2 tablespoons freshly shredded Parmesan cheese

Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Spread one side of each bread slice with pesto. Arrange bread, pesto sides up, in bottom of baking dish, cutting slices to fit if necessary. Sprinkle with olives, bell peppers and mozzarella cheese.

Beat eggs, milk, salt and pepper until well blended. Pour evenly over cheese in dish. Sprinkle with Parmesan cheese. Cover and refrigerate at least 2 hours but not longer than 24 hours.

Heat oven to 325F. Bake uncovered 55 to 60 minutes or until knife inserted in center comes out clean and top is golden brown. Let stand 5 minutes before cutting.

Here's a quick and easy pizza bake

2 cans of biscuits - each biscuit cut into quarters
    mozzarella cheese - shredded
    jar of spaghetti sauce
any of your favorite pizza toppings - onions, pepperoni, peppers, hamburger, sausage, etc. (if you are using hamburger or sausage pre-cook)

mix everything together except the cheese and place in a rectangular baking dish. Add shredded cheese to taste to the top. Bake in 350 degree oven until hot through and cheese is melted.

The directions are not very specific - it's basically like making a pizza except in a casserole form. My kids love this and it is very quick and easy!

That a great pizza idea. I do pretty much the same thing for pull-a-part apple bread.

1 can of biscuits - each biscuit cut into quarters

2 Apples- cut in to small chunks

    Butter about half a stick

    sugar and cinnamon to taste

put the butter and the biscuits in a pan and mix until the butter has coated the bisciuts then add the apples and spices. stir and pour into a baking dish, bake for about 12 minutes...on the temp thats on the out site if the biscuits. I hope everyone could understand that, it a homemade thing so I hope it came across ok. It great with Ice cream. Its best when warm.

    hi!!

I know how it is trying to cook quick meals that are still tasty

I'm not sure what kind of food you like, but I find one pot meals are quick and easy and saves on washing up too.

    here;s one that we love:

    chicken breasts, sliced
rice, (as much as neede for family)
    onion,
    carrots,
    stock or seasoning,
peas or beans in tin/can if you like,
    creamed coconut if you like,
    a little oil,

heat oil in pan, fry off/sautee onion and carrot until soft.
add chicken and fry untill browned and cooked through,
    season,
add peas/beans boil gently, cut creamed coconut and add to pan stirring well.
add rice, stur well. add enough stock or water to cover rice and bring to the boil,
    simmer until rice is cooked.

what kinds of food do you like? do you have an omlette maker? I use one and cook quick meals in it, like stuffed chicken breast, stuffing/soup bake, wraps and all sorts.
also I have a baby george grill which cooks meat dishes super fast. My lot love the kebabs I make with minced meat, onion and seasoning.

    Chicken Parmenson.

    4 prebreaded chicken breasts
1 can italian diced tomatoes (wal-mart has some for $0.50
    1-package of skim mozerella cheese.

put the chicken patties in the oven for I believe 30-40 minutes then take out and put the mozerella cheese.

The kraft foods.com has it online. I love it.
