    Cauliflower Bacon Soup

    Here's that recipe I promised you, Cyndi

    Susan’s Cauliflower & Bacon Soup



    Ingredients:
    1 cauliflower, chopped into 2cm (1") pieces and placed in a large bowl

    1 onion, diced
    6 small stalks celery, roughly chopped
    4 rashers bacon, cut into small pieces
    Avocado oil (or your favourite oil)
    1 – 2 teaspoons crushed garlic
    1 – 2 teaspoons turmeric
    1 teaspoon cumin
    1 teaspoon coriander
    teaspoon ground black pepper
    1 litres (6 cups) stock/broth and water (I used chicken broth and half or more was water)

    1 teaspoon Vegeta powder (vegetable stock powder)

    2 teaspoons Himalayan salt, adjust to taste
    Dried Basil leaves
    Sour cream


    How to make the soup:
    1. In a large cooking pot, fry the chopped bacon in the oil, set aside the bacon to drain on paper towel.
    2. Add the onion, celery, turmeric, coriander, cumin and pepper to the bacon dripping and oil, fry for a few minutes.
    3. Add the chopped cauliflower and mix together.
    4. Add the Vegeta, chicken stock, salt and water together.

    5. Cook the soup in three batches: transfer 1/3 of the vegetable mix to your Soup Maker and add 1/3 of the liquid. Set Soup Maker to Smooth and allow to cook. Cook the remainder in two more batches, adding the cooked soup back into the pot so it can all be heated when you are done cooking batches in the Soup Maker. (If you don’t have a soup maker, cook the whole lot on the stove top till all vegetables are soft, cool the soup slightly and then blend it in batches).
    To serve: Reheat the soup gently, then ladle servings into bowls. Add a dollop of sour cream, some bacon bits and a shake of Basil to the top.
    Serve with warm tiger bread and real butter. Best eaten with good friends
    Serves 6 easily.
