    Quinoa...Does anyone on here eat it besides me?

    Quinoa Salad

    2 Tbls fresh lime juice
    2 Tbls butter- melted
    1 Tbls coconut oil
    1 tsp stevia
    1/2 tsp salt
    1/4 tsp pepper
    1 tsp garlic - minced ( I do 6 cloves)


    1 c quinoa ( I use white or red and sometimes I mix them both)
    2 c water


    1 can pinto beans - drained and rinsed
    1 can corn - drained
    2 large roma tomatoes - diced
    6 green onions - diced
    1 cucumber - diced
    1/4 c cilantro - chopped
    1/2 red pepper - diced


    Mix together lime juice, butter, oil, sugar, salt, pepper, garlic.

    Bring water to boil. add quinoa and simmer for about 15 minutes. Fluff with fork (I usually make this the day before and leave in the fridge overnight to cool)

    Pour liquid over quinoa.

    Add remainder of ingredients.

    It is refreshing and healthy, good for you and something different!

    I eat it all the time. I don't usually make it myself but have. My local grocer put together a little salad with tomatoes, cuke, and red onion and I get a container and bring it to work. Thanks for your recipe, I'll try it!

    I have never had it. Everything sounds good in the recipe, I may have to look for it in the store. Would I find it

    close to the rice maybe?

    Thanks Karen, I'll have to try this. I tried Maria's salad and loved it. I was wishing I could reproduce that one but this sounds good.

    Cyndi, yes, look by the rice or maybe the beans. Depends on the store.

    Karen, the recipe looks yummy. Thank you for sharing it. I'll put it in my recipe document on Word.

    I use Quinoa in some of my rice dishes...I just love it, it makes a big dish, but keeps for almost 2 weeks in the fridge, so when I need a snack or with dinner, I have a dish and it is so refreshing!
