    Stuffed Pepper Recipe

    I got inspired by Pinterest when I saw a recipe for taco stuffed peppers. I altered what I do for my chili to keep it mild for DH. Here goes:

    1 pkg ground turkey
    1 pkg ground turkey breast

    2 cloves fresh garlic, minced

    1 medium sweet onion, minced
    1 red pepper, minced
    1/4 -1 jalapeno pepper, minced (optional)

    1 large can of organic, fire roasted tomatoes
    1 small can of tomato paste

    6-12 sweet red peppers, seeded and sliced in half, lengthwise

    salt, pepper to taste
    1 can of black olives, chopped
    cheddar or mozzarella cheese, shredded

    1 cup dry of a rice blend (brown, wild, red), cooked

    1. Cook the rice according to directions: usually 2 cups water to 1 cup dry rice.
    2. Cook the ground turkey in a large skillet with small amount olive oil with salt and pepper. When the meat is about 3/4 done, add garlic and cook for a few minutes then when just about done, add the tomatoes and tomato paste simmer.
    3. In separate skillet, saute the minced peppers, onions and garlic in olive oil. (I would add the jalapeno in here if adding it to the whole recipe).

    4. Stir in the peppers, onions, and rice in with the meat mixture, adding the olives last.

    Set oven to 350 and place peppers in a pyrex dish brushed with olive oil, without stuffing in them and cook for about 10 min to get them started.
    After 10 min, remove the peppers from the oven and spoon in the meat mixture. Put back in the oven for about 20 min and remove again to add cheese. Put back in for another 10 min.

    I hope I remembered this right b/c I want to make it again!
    I had a lot of meat leftover and served it over slices of polenta. I just heated it all in the oven for about 20 min.
    So 6 peppers if you want left overs to freeze or cook all 12 peppers if you are serving them at a gathering.

    Looks like a great recipe and I do think that you could make it ahead and freeze the filling. Pull out and let thaw then stuff your
    peppers and cook. Thanks Maria.
