    Chicken Enchiladas

    I was asked to share this recipe. It's one of our favorites. I have the original recipe typed up but I've added notes to how I change it when I make it.

    Chicken Enchiladas
    8 6” flour tortillas
    4 cloves garlic, minced
    1 t ground coriander
    ¼ tsp pepper
    2 Tbls butter
    3 Tbls Flour
    8 oz. sour cream
    2 cups chicken broth
    1 or 2 jalapeño, chopped and seeded
    1 cup shredded Monterey jack cheese
    2 cups cooked chicken
    tomatoes, chopped
    green onion, chopped


    Preheat oven to 350. Wrap tortillas in foil and warm 10 – 15 minutes.

    For Sauce: in saucepan, cook onion, garlic, coriander and pepper in butter until onion is tender. Meanwhile, stir flour into sour cream. Add to onion mixture. Stir in broth and chili pepper all at once. Cook and stir until thick and bubbly. Remove from heat and stir in ½ of the cheese.


    Filling: Stir ½ sauce into chicken. Place about ¼ cup filling on top of each tortilla, roll up. Arrange rolls seam side down in lightly greased 12X7” baking dish. Top with remaining sauce. Bake covered about 35 minutes. Uncover and sprinkle with rest of cheese. Bake uncovered about 5 minutes till cheese is melted. Sprinkle with tomato and onion. Let stand 10 minutes before serving.

    I use a lot more coriander and I'll add some cumin.
    I use 4 serrano peppers and I keep some of the seeds. The seeds and membranes make it hotter.
    I've been shredding the chicken in the kitchen aid stand mixer. It makes a firmer filling. DS likes it when it's just chopped up and a juicier filling. Does that make sense?
    I usually don't bother to put the green onions or the tomatoes on top. It makes it look prettier but the kids don't like it.
    I don't warm up the tortillas at all. Well if I do, it's in the microwave.
