    Oat Flour

    My DH has an intolerance to wheat gluten, and I like make banana bread with ripe bananas periodically, so last night I made one with oat flour and it was absolutely delicious! MIL said she liked it better than regular wheat flour too!
    No special recipe except that I used the oat flour instead. Can't wait to try some more baking recipes now, esp w/holiday cookies.

    Have any of you done that?

    What a good idea! Must try that myself sometime My stomach likes it when I stick to gluten free.

    We use oat flour when we make potato pancakes and Danish Apple cake...That's about the only time I do, but will have to try it in Pumpkin Bread...

    Susan, I don't necessarily have an intolerance but my DD and I both notice that it's easier to digest the gluten free pasta.

    Karen, I want to try this flour for oatmeal cookies.

    Maria, I would think it would enhance the cookie since the use of the oak flakes, let m know how you like them...Also I know we use it in Ableskeiver (a round ball cross between a pancake and waffle) so I wonder how it would do in pancakes and waffle Americans make?

    I have no clue about the oat flour. Isn't it more expensive than the wheat?

    Karen!! How do you make Ableskeivers? DH has been talking about them and has been looking for a special pan to make them.

    PS...You can add some (1/3 -1/2 cup) Cocoa powder to make them chocolate...

    LuAnn...You have to have the pan in order to make them...Eggs, oat flour or regular flour, sugar, baking soda, baking powder, melted butter and milk more or less...Think of your favorite pancake mix you make, but instead of using one egg, add 3 yolks and whip 3 eggs whites stiff, then fold them in when done making the mix...I use oat flour and buttermilk, but you do not have to)...The pan half half circle holes...You put a bit of shortening or vegetable oil, in each hole, pour in the dough and when they are bubbly and brown on one side, you use a Ableskeiver (in Danish it is aebleskivers) fork to flip them around and cook the other side of the ball...Sometimes we will add Currant's, or Marion Berries before we turn them...When they are done, you dust them with powered sugar and serve with jam or whipped cream...
