Ok.. let's see if an Aussie can tempt you with a recipe
This is a great plain muffin recipe.
3 cups (12 ounces) Self Raising Flour
1 cup (8 ounces) sugar
2 eggs, lightly beaten
1 cup (8 fluid ounces) milk
3 ounces butter, melted
Preheat the oven to hot (415 deg.F). Lightly grease a 12 hole (4 fl.oz) muffin tin. Sift the flour into a large bowl and stir in the sugar. Make a well in the centre.
Mix together the eggs, milk and butter and pour into the well all at once. Using a wooden spoon, stir until just mixed. Do not overbeat - the batter should belumpy.
Spoon the mixture into the muffin holes. Bake for 15 - 20 minutes, or until puffed and golden. Cool on a wire rack.
VARIATION: For a low-fat muffin, use skim milk and use orange juice instead of half the butter.
I make these muffins often. They are so quick and easy. Usually I add one cup of frozen berries. Either Raspberries, Blueberries or Mixed Berries. I don't change any of the other ingredients.. I just add the frozen fruit. Perhaps the only thing that needs any adjustment is the cooking time.. perhaps a further five minutes but check them first.

I had a very similar recipe that I learned in cooking class in 7th grade. I used to wake up early on the weekends and make these for my family as a surprise. I think I'll try them again, it'll be a good trip down memory lane.

Donna since it's allready Thursday and you want to make them soon I'll answer for AngieYou can throw them in frozen. (now I don't know if she actually does this or not, but I have and never noticed any ill effects) (well only if I ate too many muffins)
