    Mexican Chicken Chili

    1 can corn, drained
    1 can pinto beans, drained
    1 can black beans, drained
    1 jar (16oz) of salsa
    1 8oz can tomato sauce
    2 can chicken broth
    2 good size chicken breast
    2 Tablespoons of chili powder
    1 teaspoon of cumin
    1 bulb of garlic, chopped

    This is how I cook it. I boil the chicken breast and than chop them up with my chopper so they are fine little pieces. While the chicken is boiling I usually open my beans and put them in a strainer so I can drain and wash them off. Open all your other cans and have them ready to pour in.

    Than I just put everything in a soup pot and let in cook for about 30 minutes. Serve with nacho chips, shredded cheddar, green onions and sour cream! YUMMY!!

    I made this last night because it is really starting to get chilly here and am having leftovers for supper tonight.

    It is very good! We ate it for supper and than again the next night. I think my husband even took some to work. It gets better the longer it sets.

    Me too! I think I'd fix it in my crockpot. I bet we could use left over turkey.

    It is a great soup--a thick soup, but great. Perfect if you are not really wanting chili, but wanting something close to it. My mom makes it with turkey and with burger. Whatever she feels like. I just have always used chicken. I buy the big bag of chicken breast at Sam's and I just boil two of them and them chop them up with my chopper so it is shredded like pieces.
