    Strawberry bread

    I use to make this all the time, very good. You can cut the recipe in half and just make one loaf. Has the texture like banana bread. Enjoy

    STRAWBERRY BREAD

    4 eggs
    1 1/4 cups vegetable oil
    3 cups all-purpose flour
    2 cups sugar
    3 teaspoons cinnamon
    1 teaspoon baking soda
    1 teaspoon salt
    1 cup chopped pecan
    2 packages frozen strawberries (10 oz each), thawed and drained

    Preheat oven to 350. Grease and flour 2 (9- x 5-inch) loaf pans; set aside. In
    a medium mixing bowl, combine strawberries, eggs and oil; stir to mix well.
    In a large mixing bowl, combine flour, sugar, cinnamon, baking soda, salt and
    pecans. Add strawberry mixture to dry ingredients and stir just until blended.
    Pour into loaf pans; bake for 1 hour, or until toothpick inserted in center comes
    out clean. Cool in pans for 10 minutes, then turn out onto racks to cool completely.

    Thanks for bumping it up. I didn't realize it was posted before. I'll probably pick up the frozen strawberries tomorrow to make this. Have you ever used your fresh strawberries?

    I used fresh in the ones that I made today. After I mashed them up I still drained some of the juice off them.

    This sounds so good, Cyndi. I might try a gluten free version. I will just substitute the flour for a gluten free mix and perhaps add some GF baking powder to make it SR as it is a bit heavier than All Purpose I think. I'll pick up some frozen strawberries and get some pecans next time I go shopping.
