    Hi ladies..
    A friend of mine is looking for a recipe for Corn chowder.. does anyone make this or knows how to? I personally don't like corn.. therefore no interest but my friend loves it.. she's on a very low income and is looking for budget meals. We're approaching our winter over here so it's the perfect time for soups and the like.

    yes! I have a great one for Chicken Corn Chowder.

    1 tablespoon butter or margarine
    1 (8-ounce) package sliced fresh mushrooms
    1 medium onion, chopped
    2 (14 1/2-ounce) cans chicken broth
    1 (16-ounce) package frozen shoepeg white corn
    2 cups cubed cooked chicken breast
    1 (10 3/4-ounce) can condensed cream of chicken soup
    1/2 cup uncooked orzo or rice
    1/2 teaspoon dried basil
    1/2 teaspoon dried rosemary or thyme
    1 tablespoon sugar
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 cup milk
    2 tablespoons all-purpose flour

    Melt butter in a large Dutch oven over medium-high heat; add mushrooms and onion, and sauté 5 minutes or until tender.
    Add chicken broth and next 9 ingredients; simmer 10 minutes or until orzo is tender.
    Stir together milk and flour in a small bowl; gradually stir into chowder, and simmer 5 minutes.


    I leave out the mushrooms and thyme because I don't like either and it still comes out delicious.

    Hi Angie, Here is a wonderful recipe for corn chowder. It is one of my favorite soups to make and I have never served it without being asked for the recipe!

    Corn Chowder
    1 lb. bacon
    2 onions – diced
    8 Tbsp. flour
    3 – 11 oz. cans Shopeg corn
    4 c. water
    4 c. peeled, cubed potatoes
    3 – 12 oz cans evaporated milk
    1 tsp. salt
    ˝ tsp pepper

    Sauté bacon until crisp, remove from pan. In a small amount of bacon grease, fry onion til soft. Stir in flour. Slowly add milk, cook til gravy thickens.

    MEANWHILE: cook the potatoes in 4 cups water til tender – do not drain.
    Add onion gravy to potatoes. Add bacon, seasonings and corn. Stir until well-mixed and mixture comes to a boil.

    I know it's been a while since you posted this recipe ~ Karen.. and I thought I had passed it on to my friend..however.. not the case. Never mind.. I gave it to her this week and she was excited because she said it sounded like how she saw it being made many years ago. So.. from her.. THANK YOU.. now can you or anyone else answer me this..

    what sort of corn is SHOPEG CORN?? I, myself, do not eat corn and thus never buy it.. so I'm not really sure what sorts you can buy in a can. I am assuming that Shopeg is a brand name? Is that right? and my friend asked.. is it creamed corn? or just the kernels? oh yes.. us Aussies are really strange people
    I need this info asap because she wants to make it end of this week.. so any comments here would be greatly appreciated.

    Shoepeg corn is a variety of corn. It grows on the cob in an irregular pattern (not in rows). It's a little whiter and sweeter than regular yellow corn. I think it's called Shoepeg because of the shape and something to do with pegs that held the soles on shoes ages ago(or something like that)

    Don't worry Angie, I have no idea what Shoepeg corn is either, lol. I'll have to look for it the next time I go to the grocery store.

    Thanks.. what we really need to know is whether to replace it with just corn kernels or creamed corn... Gosh.. I'm gonna have to look at what corn we do have here. I remember a few years ago I saw a can of pumpkin that came from the USA.. perhaps we've got more than I know
