Garlic Lime Chicken Fajitas

1 tsp Minced Garlic (fresh or dried)
1 tsp Minced Onion (fresh or dried)
3/4 tsp Ground Cumin
1/2 tsp Oregano Leaves
1/2 tsp dried Cilantro Leaves (1/4 cup chopped fresh)
1/2 tsp Coarse Ground Black Pepper
1/4 cup Lime juice (about 3-4 small limes, pulp OK)
1/4 cup Orange juice (1 large orange, pulp OK)
2 tsp Olive Oil
1/2 tsp salt

1-1/2 lbs. chicken cut in thins strips or a package of Chicken Tenders
1 container of Pico de Gallo (vegetable section of your store or you can make your own, about 1 cup or so)

Mix juices, oil and seasonings in a small bowl with a whisk, reserve 1/4 cup for later.

Place chicken and the rest of the marinade in a large zip lock bag and place in the fridge for at least 30 minutes, over night is fine too...

Cook and stir chicken in a large heated skillet on medium-high heat 3 minutes or until lightly browned. Add Pico de Gallo, remainder of the marinade and continue to cook 5 minutes or until chicken is done...

Serve with warm tortillas and all the fixings you would for Tacos...

If I use Chicken Tenders, I add a Tabls. of cornstarch to the pan to make a thin sauce and serve with Spanish rice and warm tortillas and butter...

I have a huge weakness for Mexican food, and listed fajitas on my menu for the next couple weeks. Can't wait to try this!
