Scottish Chicken
Serves 4-5 medium eater, cuts in half good, freezes good!

1 chicken or the pieces you like Skinless
3 tablespoons butter
10 potatoes peeled or unpeeled sliced about ¼ to ½ inch thick
2-3 small yellow onions cut in slices and broken into rings
½ to 1 teaspoon paprika
1 to 1 ½ teaspoons thyme
Dash or two of Rosemary (if you like)
2 - 3 cans low sodium fat free chicken broth

You can do in crock pot (about 6 hrs. max) on top of the stove
(about 1 ½ to 2 hrs) or in the oven at about 350 for 1 ½ hrs.

Brown chicken in the little bit of butter or I use spray garlic
Pam (Albertson’s brand or dollar store)
Take out. Layer some potatoes in the bottom, sprinkle some of the herb stuff, layer some onions rings, then layer some chicken pieces. Salt and pepper. Layer potatoes, spices, onions chicken etc., End with
Potatoes and/or onions on top. Pour the chicken broth down the sides of the pan so you don’t “wash”
The herbs off, and cook.

WOW! That sounds so good. I love anything cooked in the pot.

This is also good, in that is is a low fat healthy meal...One of our favorites and we are having it tonight!

Being Scottish this caught my eye ---- I will have to try this one for sure. Yummy!
