I'm not sure why this is called a soup, because there's not alot of liquid in it. It is a very easy and tasty dish. I try to keep some cooked rice in the freezer to make this quick dish during the fall and winter. :) Forgot to say that we put a little mild cheese ontop of ours after we put it into our bowl or plate.

Black Bean Soup

2 cans blackbeans, drained and rinsed
1 can rotel tomatoes
small onion chopped
1 celery stock, sliced (I leave this out most of the time)
1/2 lb. smoked sausage, sliced (we use spicy ones)
2 cups cooked rice

Cook onion and celery till soft. Add tomatoes
beans, and sausage till warm. Add rice and
heat through.

Cyndi...Have you tried the Reynolds Slow Cooker Liners? They are the bomb! I can't lift and clean the slow cooker crock too well (heavy) so I tried these and you just lift out and toss!

Havn't tried them yet, I usually just use the magic eraser on the inside of mine. And I also forget to look for the liners at the store. :)
