View Full Version : St. Patty's Corned beef in Crock Pot??

Anybody done one like this? How long do I need to let it cook- on high? I put it in at 1:30pm... do you think it will be ready by 6pm? Do I need to add water, or just let it make its own juice?

I have only done Corned beef once in a crock pot and I cooked it all day with potatoes and carrots...I'm not sure if this will get done...sorry I didn't see your post sooner...

ah well. I will test it after 6 and see if it is fork-tender. If not, we'll have take-out tonite and corned beef tomorrow! DH and one son won't be home tonite anyway, just me and a friend and older DS.

Would you believe I forgot to turn the crock pot up to High! yeah... sooooo, c-beef was NO where near done after 5 hours on Low! LOL

Should be great for late night snacking!

I do my corn beef all the time in the crock pot I use lots of water and cook it all day and it is YUMMY that way I have plenty of water for my cabbage and carrots

Sorry I'm so late with this, but this is from the Crock Pot cookbook that came with my Mom's years ago.

3 carrots, cut into 3" pieces
3-4 lb corned beef brisket
2 medium onions, quartered
1 cup water
1/2 small head cabbage, cut in wedges

Put all ingredients except cabbage wedges in Crock Pot in order listed. Cover; cook on Low 8-10 hours (High 5-6 hours). Add cabbage wedges to liquid, pushing down to moisten, turn to High and cook an additional 2-3 hours.

I HATE corned beef and cabbage, so I can't tell you how this is, however, my Mom makes this every year for St Pats. Happy Cooking!
