FEED AN ARMY CASSEROLE
2 pounds ground beef
Small onion
Small green pepper
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 small jar pimentos (chopped)
1 pound cheddar cheese (grated)
1 soup can water
1 (12oz. package egg noodles medium size)

Brown and drain ground beef, onion, & green pepper.
Cook noodles per package directions. Combine all ingredients.
Bake uncovered for one hour at 350 in large casserole dish.
This freezes very well.

This recipe is very easy to cut in half. And lots of times I don't have the green pepper so I make it without it.

What can you substitute pimentos with? Not that I've ever had them, so I have no idea what they taste like.

You can just leave them out, If I don't have them I leave them out, to me they don't have alot of flavor, just kind of pretty with the little bits of red in it. :)

My MIL gave me this recipe.

1 lb hamburger meat browned and drained
1 lg jar of salsa
1 diced fine onion
Lettace, tomatoes, cheddar cheese
Tostados (sp?)

after the meat is browned and drained, add salsa and simmer abt 10 min.
Dip out on plate add chopped lettace, diced tomatoes and cheddar cheese on top
use tostados for your fork. You can make as much or as little as needed, just add or subtract meat, salsa mixture. This is quick and simple to make and delicious to eat. It makes a meal.

This sounds good too, DH dosn't like salsa but I could fix it for my lunch. :D
