4 skinless, boneless chicken breasts

4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded cheese
2 Tablespoons sour cream (optional)

Preheat oven to 375

Sprinkle Taco seasoning over both sides of chicken & place in a lightly greased 9x13 baking dish.

Pour salsa over them in the pan.
Bake at 375 for about 25-35 minutes, or until chicken is tender & juices run clear.

Sprinkle w/ cheese, and bake for an additional 3-5 minutes, or until cheese is melted and bubbly.

Top w/ sour cream if desired, and serve.

We are on a low sodium diet here so I use less of the taco seasoning.

You can make this as mild or as caliente (hot amigos) as you want according to the salsa you choose!

Mexican food is our favorite....I need to cook something for Monday night....will have to make this one....sounds very yummy!

Made this one today....it was a hit. It was so quick and easy to make....I love these types of meals and it tasting yummy!

Karen - I'm so happy you liked it! :D It really is one of the quickest & easiest recipes ever, and I almost always have the ingredients on hand!
