This is really good also as a dip!

2 cups corn(2 cans)
1/4 cup finely diced red bell pepper
1/4 finely diced red onion
1 tsp minced jalapeno pepper with seeds
3 Tbsp veg oil
1 Tbsp dijon mustard
1 Tbsp white wine vinegar
1 Tbsp granulated sugar
1 Tbsp finely chopped fresh dill
1/4 tsp kosher salt

Combine corn, pepper, onion and jalepeno
In sauce pan whisk together oil, mustard, vinegar, sugar dill and salt.
Bring to a simmer and pour warm vineagretta over the corn mixture, toss well.
allow to stand at room temperatureuntill ready to serve

it is a big hit at potlucks. It is always gone. I like it more as a dip with chips
